All cards will have fluctuations in frame rates but you're seeing a limitation to 60 fps because of a Vsync issue with Crysis 3, not because of the card themselves or the demands of the game.

Look at other games.
BioShock Infinite at 120 FPS at 2560 x 1440
Metro: Last Light at 75 FPS at 1920 x 1080
Tomb Raider at 55 FPS at 2560 x 1440
Battlefield 4 at 80 FPS at 1920 x 1080
Hitman: Absolution at 85 FPS at 2560 x 1440
Sleeping Dogs at 80 FPS at 2560 x 1440
Batman: AO at 100 fps at 2560 x 1600
CoD: Ghosts at 90 FPS at 2560 x 1600
Far Cry 3 at 70 FPS at 1920 x 1080

It's not the vsync. I don't play with vsync because of the input lag. Try Crysis 3 at  2560 x 1600. Barely makes it above 30 fps. Far Cry is another good example. Old game, newest card barely makes it. I know both Farcry and Crysis are poorly optimized but that doesn't matter. Games are now getting more demanding and some probably heavily optimized for AMD instead of Nvidia. It's not getting easier.

So 1080p is good for me now. It's also a plus because if I get used to a higher resolution I will get eyecancer from my PS4 like with my PS3 right now.

The Vsync issue with Crysis 3 doesn't matter if you have it turned on or not.  It's an issue with the game.
