This is because Nintendo tries to win the market by putting things other than the latest graphics into their systems usually in a manner to somehow enhance gameplay. Nintendo also likes to go for a lesser price and try to win people over by playing to the novel aspects of their hardware with software that shows it off. Also, I am not denying the fact that the hardware inside the PS4 and Xbox One compared to Wii U or the one inside Vita compared to 3DS is weaker (because it quite clearly is not), but I am saying that Nintendo's hardware has some key unique points that the others have and they are cheaper and reliable which is why I think Nintendo's hardware still has a lot of potential in the market.
On a sidenote, everyone has complained about the quality of the 3DS XL screen and that is because Nintendo built the XL later due to demand for a portable console with a larger screen but they also did not want to fragment their current base so they had to use the 3DS hardware within it (which would have pissed a lot of developers and buyers off) hence they could not have put a higher-resolution screen in it. The screen on the original 3DS is fine, it has a pixel density of about 230 PPI so you do not really see a lot blockiness and it is also 3D. Also the price of the 3DS XL and 3DS justify the lesser hardware put into them (I guess what I am saying is "you get what you pay for"). There are phones priced above PS Vita that do a lot more, have more power, and a better screen. but that does not mean Sony should abandon what they are doing and make something way mor expensive just for the specs (and ignore a big part of their audience in the process).
