I personally don't play many games that are less than 1080 but to be fair it depends on things like the size of your TV, how far away you sit from it and how good your TV is at upscaling. And of course the native resolution of your TV too.
My TV is 40inches and I sit close to it for a largo FOV (field of view) for greater immersion so 1080 matters to me a lot. But I've seen people play on very small TVs from several meters away so it probably would not matter to them. In the end the relevency will vary between person to person. However as more TV's become native 1080 and the size increases it will matter more to more people as time goes by.
