Aonuma said he wanted to make the player to feel progress instead of having it from the beginning. Also veterans still can use the normal one if they want to. And yes, you don't have to change the wind with the new sail.

Didn't knew about the new sail, I thought it was automatic from the beginning. I actually like this more. 

As for the videos, the only thing I don't like is that you don't hear the Wind Waker song when changing the wind, it will obviously save a lot of time, but idk I like hearing the song and never bothered me to hear it like a million times in the original game lol.

Aside from that nitpick, I love how the game looks. Unfortunately I will have to wait until November to play it

You hear it the first time you play it, after that it gets cut.
