Lost Planet and Dead rising aren't necessaraly indicative of the direction RE5 is going graphically. Neither are RE games, just Capcom games. Using this logic you could argue that RE Umbrella Chronicles is the direction RE5 will go graphically by proxy of title alone. The point is that it's moot to use prexisting games in this generation as dowing rods to see RE5's direction.

I remember hearing it would be on the PS3 and 360 but that Capcom wouldn't be against making a Wii version, at the time though, the Wii's development stats weren't yet available to them and since then they have avoided commenting on a platform altogether.

Capcom sided with Nintendo on the Gamecube because of the Gamecube's superior graphics (Xbox wasn't an option due to poor Japanese sales) and now they may very well do the same with this gen, pursuing the graphically superior consoles. Incidentally the PS2 was handed consolation games just like Umbrella Chronicles in the form of the Gun Survivor series and the Outbreak series, even a remake of Code Veronica just as the Wii is getting a remake of RE4. I figure we will see RE5 later released for the Wii as RE4 was later released for the PS2 assuming RE5 will be released as a PS360 exclusive first. The only real difference between this generation and the last is that Capcom has no agreements with any of the platforms as they did with Nintendo during the Gamecube, they claim to no longer be making exclusives for their major games.
