From the only FAQ guide posted on GameFAQs which is apparently translated from Japanese (or appears to be).

"While harvesting fruit, carefully look for "delicious" fruit! There is usually one "delicious" fruit in your town when your town is created. Native "delicious" fruit sell at R. Parkers for 600 bells each. You can sell it, but it's probably better to save it until you get a Shovel: then you can plant it to create more! If you sell it, though, don't fret because another "delicious" fruit can appear on your native fruit trees in the future. Bury [???] hiryou or Fertilizer with a Shovel near a native fruit tree to increase the probability that the tree will produce "delicious" fruit.

A "delicious" fruit tree will bear fruit only four, five, six, or seven times. Then, it will shed its leaves. If you wish to continue to harvest, you will have to replant. Occasionally, a "delicious" fruit tree will produce "worm-eaten" fruit. Bury [???] hiryou or Fertilizer with a Shovel near a "delicious" fruit tree to decrease the probability that the tree will produce "worm-eaten" fruit."

That's so obviously translated from Japanese. xD

Somewhere I heard that it isn't a 100% chance. I guess this confirms my thoughts?
