I guess UE4 could be a monster but I really doubt that it will "require" 2 GB of VRAM at 1080p even when games are maxed.
I recently went from GTX670s to 7950s and I noticed that some games like Trine 2, which were using 1.9-2 GB of VRAM before are using 2.6-2.7 GB now. This is on same settings and 3 monitors. They ran just as smooth before if not smoother while using only 2 GB...
I inquired with some folks about why this is so and apparently it has to do with the efficiency of the cards themselves and how they deal with VRAM usage. As long as a single frame you are rendering isn't requesting more than your available VRAM, you are fine and will not see frame rate drops. At 2GB, usually only very texture heavy games at very large resolutions tend to see VRAM frame rate drops. Metro 2033 at 5760x1080 per say...
A game like bioshock Infinite probably stores a shitload of stuff in to the VRAM while a single frame would never need more than 500 MB. Once you get to 2GB, on a 2 GB card, it starts to drop stuff out of VRAM which I guess could cause some pop in if you backtrack, but even that is extremely unlikely.
