Is this for gaming or your other rendering stuff?
I don't know about your rendering needs but in terms of gaming you won't need more than 3 GB before the GTX 800 series comes out and you upgrade to those...
Because of efficiency, different GPUs use different amounts of VRAM. 2GB 680 uses 20% less VRAM on average than a GTX 580 for most games. I bet the GK110 is even more efficient than GK104 cards. So I doubt you'll need more than 3GB for a while... Unless you want to do 3 X 4K res in surround or something crazy like that.
