Well Wii is already emulated and WiiU is similar enough, there will be Dolphin builds running soon I'm inclined to believe.

Right. While it is quite possible that it is easy to emulate Espresso (with all signs pointing towards being a multicored version of the Broadway), Latte is a very odd duck, and the GPGPU elements are probably going to take a while for folks to wrap their heads around.

Exactly, even the tech-heads who paid for photos of Latte's innards still can't agree on what's what.

The controller screen streaming could also be tricky to emulate well; the Wii U was built from scratch to support this, and its always harder to do things in software than in hardware.

"Dolphin U" is a looong way off.
