I hate to crush your 'hardcore' hopes and dreams, but Wii Sports, Mario Kart etc are a lot more mainstream than, say shadows of the colossus, despite being 'cartoony'.
As to whether I would prefer Nintendo make games more photorealistic, I really don't care.
I like that they have some games, such as Metroid, with amazing fairly realistic graphics, and I like that they have games such as Pikmin, where everything is cute.
As for the Windwaker vs Twilight Princess debate, I'm not even going to touch that - it's like your parents (children) sitting you down and asking you to pick a favourite.
