As far as I remember the PSX had FFVIII (Gunblade! ;o), MGS, 3 MMX games, a few Resis, all with depth as well as gameplay :) Gamers were okay with them. Of course games where story/world is involved benefit from technological advancements to better present the characters, worlds, environments, but that's with any genre that attempts to captivate in an imaginary world with visuals and story.
I'm pretty sure you would have enjoyed Metroid Prime and Mario Galaxy less with PSX graphics too!
