They made a profit on every console sold (I believe), and games didn't cost anywhere near as much to develop so a game selling 500k would easily turn a profit for them. Why wouldn't it have?

They made a profit when it cost $99? And didn't it cost $199 at launch? I find that doubtful, considering its relative power.

I can't find a press release, but I remember them saying that the 3DS was the first console they'd ever sold for a loss, so I'd imagine so. Or break-even at $99, at least.

But that's what makes the Wii-U's situation even more difficult. It has a very expensive controller, something the Gamecube didn't. They probably couldn't even cut the price to $199 without taking a serious loss per sold unit. So if Wii-u sales don't pick up, there's not much Nintendo can do.
If one of the big three is leaving the console race this generation, i think it's going to be Nintendo. After that i can see them focusing on mobile devices, maybe even release a Nintendo tablet(something i think the Wii-U controller should have been in the first place).

I'm not saying they will be forced, but they could very well make the desicion to drop out themselves if Wii-U fails. Focus is shifting towards mobile device anyway, and it's a market Nintendo has been very succesfull in for decades. Like i said, a Nintendo tablet could be great, with the ability to stream to a bigger screen. In 2-3 years mobile technology will probably have advanced to the point that they could make a tablet that's more powerfull than the Wii-U.

They're already seeing success in the handheld area, but they'll drop out of the console business anyways so they can make a tablet device despite the fact that Nintendo have spoken against the gaming business model of mobile devices time and time again?
I don't think so.
Just last month Iwata spoke about Nintendo's future and how they want their handheld and home console to stay separate but have similar architecture and share assets and blah blah blah. Nintendo have made it pretty obvious they don't plan on leaving the console market any time soon.
