Because of this attitude. You don't want to taste something you've never tasted. Why? How is that any different from a child refusing to eat vegetables?

Actually, I'm mormon so it is actually against my religion.  Also, your analogy to a child refusing to eat vegetables is a fallacy of analogy.  There are a lot of healthy reasons for somebody to east vegetables.  However, alcohol on the other hand can have some rather negative effects on your health.  It is not a good analogy.  

There are lots of reasons not to drink alcohol, from negative effects to inhibitions and health.  There aren't that many reasons to not eat vegetables other than not liking the taste...
