It's more likely that DQVI's legs were weaker, because it opened significantly higher due to many DQ fans already owning the system because of previous games. But I don't disagree with the notion that the legs could have been a bit better for DQVI, if it released earlier in the system's lifecycle.

DQVII has a good chance to outsell all of the DS remakes individually, because the demand for JRPGs is high and the 3DS is far from being oversaturated in that genre, meaning that a JRPG fan doesn't need to be overly fond of the DQ series to consider picking this one up.

That too, of course. DQVI was the only one to release after DQIX's release on DS so obviously the DQ userbase had fully migrated to the DS by its launch.

As for your second comment, I really don't think it works that way. Most of the time, people don't decide to buy a game just because they want to buy some game even though they don't particularly like it. If someone isn't particularly fond of DQ, the lack of similar JRPGs probably wouldn't get him to buy it. In fact, I'd say that having a whole lot of JRPGs on a console is more likely to be beneficial to each one of them than it is to cause oversaturation. Obviously, if you own the console because of a certain game, you're probably going to try out similar games as well.
