First: When the mini was released it was smaller than a regular iPod (hence the "mini") - the Nano came later.
In the Steve Jobs biography it says Jobs didn't want to produce the iPod mini at first because he couldn't see the point in it. What he missed was that this was precisely what people wanted: A smaller iPod to use during workout and jogging. Apple completely underestimated demand for a music player that was small enough to use while doing sports. Sometimes a really small change in a product (like size reduction) can make all the difference. So it's not that "people buy anything from Apple" - the iPod mini created a totally new market on its own and was exactly what people wanted.
Also, innovation always needs technology to happen - back when the first iPod released there were no HDD's as small as the one found in the iPod mini. When technology was ready Apple had to decide between smaller form factor + less HDD space or bigger form factor and higher capacity. They decided to go both ways by offering two versions of the product and they were totally correct in doing so.
People shouldn't be that quick to dismiss Apple's products. Apple is really smart at realizing what people actually want. Take the iPad for instance: All the other computer makers thought people wanted Netbooks. They knew customers wanted to browse the web, produce text and carry their computer with them so they made smaller notebooks and called them netbooks. Apple realized Netbooks were not what people wanted so they created the iPad. And netbooks are basically dead today so Apple was right.
When Apple releases new products demand for those products is already there. Demand is already there - and Apple analyses the demand and develops a product according to that demand. Not the other way around.
