The only significant difference here is the level of contrast, with the 360 version being slightly overdone in my opinion (crushed blacks mostly) and the Wii U version a touched too washed out. This results in the 360 version being more visually appealing in some shots and the Wii U in others.

Differences in textures, resolution etc. appears to be negligible and I doubt whether they would be noticeable during gameplay (if you are actually playing the game and not just looking at the graphics), leaving performance as the only parameter that might actually separate the two.
