Unlocking everything. When you are level 1 you have like 5 gun options, no attachments, 3 killstreaks, no contracts, etc. The games are relatively tame because you are still learning and all of the awesome stuff is still locked away.
When you hit 50 you get all the cool stuff and get to customize your play experience. Tons of guns, loads of attachments, color customization, a plethora of killstreaks, lots of contracts to choose from.
For example, in lower level games most people are running around with Spy Planes and Care Packages (both very tame, low-level stuff) as their killstreaks, but by the time you reach max level the games are filled with attack-dogs and Chopper Gunners.
