I think they'll only do it for special kind of games... Like NSMBwii and stuff like that... Why don't they change the color scheme now and then? depending on genre?

Maybe it`s a marketing thing to keep a recognizable image. For all companies the colours or symbols have been the same throught their lifetime. It`s only when a redesign happens that they change the colours, symbols or images. But even then, they try to keep that recognizable image, colours, symbols.
It generates more impact when all those things change once in a while.
