The burden of them being the only company actually supporting the console for several years finally came back to haunt them, and Skyward Sword in particular suffered from such a long development cycle. I never said it was easy, please quote me where I said that.
But I mostly agree with the man-power required to make games of such grandure. However, SotC was a minimalistic game yet still conveyed that sense of awe. I believe there are work arounds to the constraints you bring to the table, as valid as they are.
