Yeah, we always had to travel during school holidays, because of my mum's job (Educational Welfare Officer... very well can't take time out during term time!) This summer, we flew to, using American Airlines, and back on British Airways (still through AA, but on a BA flight), was the cheapest option. Some people insist on flying with Virgin, though... personally, I don't rate them (hell, I've had better experiences with Jet Airways - India's flagship airline!). You can also save money by avoiding a direct flight to Orlando.
Where do you stay? Hotels or villas? We typically stay at Highlands Reserve, which is a villa development/golf community. Really nice there, though I'm not aware of the costs (friends of the family own property, so we get "mate's rates"). I'm not sure of typical hotels, but villas are definitely a more cost-effective option than Disney Hotels... plus, we prefer the villa experience; I find with hotels, you sometimes feel more obliged to stay in, to make use of the features that you've paid for.
But, yeah, the whole school holiday thing is a massive piss take.
