I think the touch screen can be used in a meaningful way but it would require breaking with the conventions of fighting games ...
I know people will probably hate this idea, but you could do a pseudo turn-based fighting game where you were (essentially) telling your fighter what to do; essentially you control the strategy of the fight rather than the twitchy reactions of the fight. While I'm certain that it is too late to really benefit from using this IP, it would make sense to do something like this using the Real-Steel license (being that most of the robots were controlled using a controller with a touch screen in it)
