1080p requires a lot more processing power than people think. If it was something easy to do on Wii U, developers would be jumping on that because it'd be a quick and easy way for them to add value to their Wii U project, a lot of these games are on PC (Arkham City, Mass Effect 3, etc.). 

Theoretically, the GPU rumored to be in the WiiU (Radeon HD 4850) is quite capable of doing graphics beyond Nintendoland in 1080p, at 60fps no less.

Some food for thought from a post that HappySqurriel made in another thread:

"The Radeon HD 4850 was able to render multiple games that were released for the HD consoles at above 1080p@60fps ... The technology required to hit this mark is old, low cost, with low energy consumption; and there is little reason to doubt the Wii U will be able to do this."
