Show me more of what? These facts do not point to the conclusion you are making at all.
"team removed enough extra locations from the title to make up a whole other game entirely." No where does it say that did was done because it went multiplat. Since the beginning of Disc usage in games, the only purpose for having multiple discs has always been video and audio media which takes up enormous amounts of space. Simple geometry scripts and textures don't take up that much room.

Kitase wanted to stress his "final word" on topic, telling us, "There is no plan for these things that were cut -- because they weren't essential to the game -- to be revived as downloadable content," laughing as he remarked that he wouldn't want to add back in the stuff he didn't think should be in there in the first place. We're cool with that, as long as they didn't cut out a "Meanwhile ..." segment that just happened to be a remake of Final Fantasy VII in its entirety.
Put emphasis on "stuff he didn't think should be in there in the first place". The devs changed there mind about how they wanted the game to go. He even said FFXIII versus would be story driven just the same and that is still listed as exslusive. That is how they have been making all of their games for the past few years. It had nothing to do with it being ported to the 360.
Or do you seriously believe that Lightnings home and Snow's base took up over 7 GB of data?
These areas were running in an unreleased build of Final Fantasy XIII, but were cut from the final version due to considerations about game balance and game volume. It was a design choice, not a storage issue.
The game was intentionally made linear with few stops along the way because they wanted it to be story driven.
