I'm sure that sufficient consideration would enable them to find uses that actually add to the experience.
Unfortunately, some people will consider it a gimmick irrespective of its value, simply because, to them, fighting games shouldn't use touchscreens. That is, they won't evaluate any idea on its merits, but will instead judge it as a gimmick because it uses it at all. Kind of like how some people still call the Wiimote itself a gimmick, despite some games making exceptionally good use of it - the fact that they use it, in such people's minds, makes it a gimmick.
