Dedicated systems don't need as much RAM as a general purpose PC. PS3 and Xbox360 both have around 512MB of total RAM (splitted in different ways) and the game look great. If a console has 2GB of RAM it should be more than enough to be "on par" with current generation of PCs.
Let me give you a list of RAM size for different consoles:
PS2: 32MB of RAM plus 4MB of Video RAM (total 36MB)
Gamecube: 24MB of 1T-SRAM plus 3MB of Video RAM plus 16 of generic used RAM (total 43MB)
Xbox: 64MB of RAM (shared)
Wii: 91MB of RAM (splitted for different things)
PS3: 256MB of RAM plus 256 of Video RAM
Xbox 360: 512MB of RAM (shared)
