Sorry to hear that, but it is just that you have a bad/defective phone. The last time I rebooted my phone was nearly one month ago and that was because of the battery. Everything is still perfectly smooth so far. It takes 30 seconds to boot and most of the time is spent on reading the memory card etc. It is an old phone by the way not SGS2 or Nexus or anything.
There is still hope for your phone though if you are not going to replace it soon, go to XDA and flash a ROM you like, it seems your phone is barely usable so no need to get worried about doing anything wrong I guess. Samsung phones are nearly unbrickable so I have probably flashed at least 50 ROMs just for the fun of it but with a little bit of care you should do just fine.
