Same way you copy anything else to another SD card. Just get a bigger card and copy everything over. I did it earlier this year, going to an 8GB card. I only went 8GB because somebody on this site said, "4GB is probably all you'll ever need.....". I planned on getting a 16GB card. Now, I wonder if my 8GB card will be enough when it's all said and done.
Anyway, to answer your question: Yes.

Really? I didn't think it would be that simple. XD I'm guessing this method only transfers save files and the extra data stuff and I'm gonna have to re-downoad all my eShop games?

I had to redownload my eShop contendt when I did mine. There was also some system data thingy that had to be re-created. Aside from that, everything carried over. Some other guy in the thread where we talked about doing this said that everything transferred over when he did his.
The way I did it (since I only have one card reader): 1) copied all of my card data to a flash drive. 2.) copied that flash drive to the 8gb card
The way he did it: 1. copied that first card to a second, bigger card.
