well i have both consoles and will be getting it on PS3 because i buy everything on PS3 when available.
i recommend for you to stay on 360 since i'm sure your character is maxed, but if you'd like to start over then i don't see a reason not to buy ME3 on PS3.
i'll be getting ME1 on 360 soon.
