For the PS3 the HDMI->DVI cable should work fine.
For a Wii I would suggest the X2VGA2. It's a transcoder that'll convert component signals to VGA. I use it with my Wii and my TFT LCD monitor and it looks really nice. The only thing you should be aware of is that monitors can't display 480i so any 480i games you may own or VC games which I think are entirely 480i can't be played on a monitor unless you're using something else like a TV tuner or capture card. The X2vga2 does come with something called 480i easyview incase your system is set in 480i when you hook it up or changing discs or something however it's a weird workaround where the screen flickers and is fuzzy and you can only see about half the screen at a time so it isn't playable at all.
