you could do that but it would be better to use the data transfer utility just below the backup one. 

Data transfer to what? I want to keep using the same HDD, just on a different PS3

That's the beauty of the transfer, it keeps everything on the old playstation.  You can reactivate your old PS3 as well after the transfer.
