Actually, it seems that may not be the case.  Poeple ong af are speculating that the characters in the video were just sample builds that you can work towards, and it's still up to you to do whatever you want.

I really hope so, because the amount of customization that was available on Demon's Souls was one of it's biggest strenghts. I can't account for the immense amount of times I took on blue&black phantoms with that method XD.
