You're probably right. Overclocking the 580 won't make much difference in your case. I suggest getting 3D Mark Vantage benchmark and running it on performance. The score you get for GPU should be 25000 plus on a stock 580. If its less, your CPU/memory is holding you back.
Overclocking the CPU and memory could give you a nice boost as well.
Otherwise, if you can get your hands on a Nvidia compatible 3D projector...you won't regret it. They are the best 3D you can experience at home at the moment. I have the Acer h5360 and it blows away my viewsonic 3D monitor out of the water. They are like 500 bucks these days which is a complete steal...
