Processing? Oh please the Wii-U does most of the processing. Now I will give you  that it has a lot of the stuff a DS lite does but the way I think about it, if Nintendo decides that only 1 or 2 Wii-U Controllers can be used with the console, then they will be taking a step backwards. Sorry if I sound blunt but thats the way I see it. Multiplayer has always been  a big impact in my family especially four player and there are many in my family that don't like the Wii Remote/Classic Controller. They do however love Gamecube controllers. This will be a make it or break it for the system.

The issue may be more of bandwidth for the remote video signal(s) than processing. Granted that doesn't mean it's not possible to develop specifically for a mode with two Upads, just that graphics and video quality would take a hit, similarly to how they would in current split screen games.

There is also the option that the communications protocol between console and remote screen was only developed with a single client in mind and has no way to deliver different signals concurrently, but it would be pretty short-sighted of the dev team if that were the case.
