I think I'll look into Fzero X if FAST doesn't cut it for me. I don't remember having any problems with the AI in GX, unless you're talking about the campaign mode... I'm sure sometimes they are just teleporting around the tracks in that one

Regarding controls, do you mean the x/z buttons mapped to attacks? I find those hard to reach mid-race...

To attack I am pretty sure you double tap the R trigger button on the top right of N64 controller for the side swipe.  To do a spin you hold down the R trigger and hit the back button (Z).  Using a classic controller might be easier than the N64 controller.  I never had difficulties with N64 controller but I do have pretty big hands.

sounds like a very different game if the shoulder buttons are used for attacks...
