Regarding the other things you mention, take into consideration that kinematics at these insane speeds aren't always what your intuition would expect them to be (best example I can think of this in real life would be the Columbia shuttle disaster...). That's not to say that what's right for the game is proper physics either, though..
Regardless the game is to this day a blast to play and still looks quite nice (even when interlaced!). My best memory of that game was actually getting to play a few rounds of AX in Japan. Now THAT'S F-Zero!

Nah, I don't expect real life physics in a futuristic racing game. But I do expect a series to follow basic rules that were established by previous iterations. You don't drop like a rock in any other F-Zero, so GX does it wrong.
I have a hard time to play this game nowadays (actually since years), because the course design is mostly average to downright awful.
