According to what I've read thus far, yes, you have to start from scratch either from egg or new catch.

A new catch has 0 EV.

So, let's say you just go with catching.

After you catch, you throw the stats into an IV cal to see if the numbers are good to decide whether to keep it. Then you EV train it from there. After EV is maxed out, you can then do random battle and it no longer affect your EV.

Is it ok to just have random ev's from the pokemon battles in the game? I mean its not a bad thing to have the Ev distributed among all of the stats. Its not like i want my charizard to have high a certain "x" stat.

 

This sucks, i need to get someway to trade for all the legendary pokemon that i missed the special events for -_-

Get shinies, even from pissant species you can trade a shiny for anything.

Easier said then done, of course, and by that time you could have just started hacking
