That's actually an important point most people miss. How do you compare one engine to another if designed for different tasks? Should we look at GT5 in 1080p with the car detail it has on the premium models and the AA level and delcare it the best because it has the highest performance in those areas vs say Crysis at a lowly 720p? I'd say of course not, there's just no criteria to make that comparison.
So I say you can't declare these overall winners, it's just a marketing/PR game and an attempt to satisfy the "masses" as viewed by the media. Personally the only think to consider is technically how well is the engine coded, and how does it compare to comparable engines?
From what I've seen Crysis 2 on 360 looks to be more or less equal to Killzone 2/3 on PS3. Both have flaws, neither is 100% perfect, and indeed both excel in slightly different areas, but both look and perform more or less comparably. So far if there is a gap it's that KZ3 feels a little more robust, as I've already seen some funny AI glitches and the like in Crysis 2, although I think that's also a function of Crytek trying to get the game on console and preserve some (although I can tell you it's not all) of the open world AI and feel of Crysis on PC.
Uncharted 2 seems similar but is different - for example having to support a heck of a lot more platforming animation and movement than KZ2 or Crysis, for example. For TPS Uncharted 2 probably remains the high bar although you could argue the toss with God of War 3 there.
For FPS from what I've played so far I'd say it's more or less a draw between KZ3/Crysis 2 on 360 (which looks a shade better from what I've seen), so really both sets of console owners should feel happy. Everyone has access to the big multi FPS like CoD, 360 owners have Crysis 2 as a high end graphical FPS and PS3 owners have KZ3 and - even with the slight resolution drop reported - Crysis 2 as well.
