Part of the difference between Gears and Uncharted is the guns and enemies. Gears takes a lot of shots to bring people down and they're larger and slower moving than the thinner target profiles of the enemies in Uncharted. Add to that the fact that enemies in Uncharted move around a lot to not only dodge, but also when they get hit so it makes any constant fire at them a bad choice and you'll run out of ammo fast. Hell, comare like 90 AK bullets to over 600 from the chainsaw gun from Gears.
Again, the Gears of War system is more robust, I think. However, the stickiness of it can be a little annoying to me sometimes but it's still a nice system. Uncharted isn't as sticky and I actually liked it not automatically going to cover as much as Gears does. This way, I can choose if I want to go into cover instead of being forced into it, but it was still good enough with jumping to the left and right to get to the other side of a door way for example. I also didn't have much of any problems with not having things I couldn't take cover behind either and I don't recall that ever happening more than once or twice.
