UbiSoft already released their camera for the Wii. They had a fitness game for it. However the camera did not sell well and Nintendo did not support it with software and neither did anyone else. Honestly the camera was announced alongside Kinect.
You have some good ideas but the camera ruins it. Nintendo doesn't want to be seen as a mimicker if they officially endorsed a Kinect rip off they would be playing catch up rather then follow the leader. I don't think UbiSoft will copy Dance Central by using a camera etc...etc...
UbiSoft wants to offer a unique experiance not copy Dance Central. Notice that Just Dance 2 has outsold Dance Central big time despite it being the killer app on brand new hardware that has sold over 8-million units in two months. UbhiSoft will probubly launch Just Dance 3 as a launch title or near launch title for Nintendo's next system.
I expect Just Dance 3 to utalize Nintendo's next innovation in controllers. Be a big launch title or launch window title in 2012 or early 2013 shortly after Nintendo starts the next generation. It might get revealed as early as this E3 when I still expect Nintendo to at least confirm the next gen console is on its way.
