The Wii's visuals will improve as time goes on and developers start putting effort into maximizing the Wii's capabilities. Once developers stop being cheap and using last generation graphics engines you will see massive improvement.
What am I saying. Right now almost every developer under the sun is using old graphics engines like the Unreal2 engine or its slightly modified version (used in RedSteel). Fact is nobody wants to invest in creating any new graphics engine, why bother when the competition isn't either.
But once companies like JetBlackGames release their new graphics engines for the Wii. Developers who are in direct competition will be forced to improve their visuals as well. This is when the race will begin companies will start enhancing their engines or building new ones to best their competition.
Over time I think Wii games will begin to look closer and closer to first year 360 games. Games like Full Auto, Kameo or Perfect Dark Zero. Probubly not as good but pretty close.
But none of that will happen if none of the publishers see no reason to improve their visuals. Untill they start loosing money they will not utalize the Wii completely and continue using archaic graphics engines!
