Well, the deeper south you go (especially with "soul food"), the stranger food gets. 
It may not really be an American dish, but chitlins (pig intestines) is not bad... smells awful though.
Oh, and I ate Guinea Pig when I was in Peru (called Qui). It wasn't bad either.
