The reason is because Wii Speak takes a lot of bandwidth. Which explains why games that utilize it normally get a whole bunch of lag, dumbed down graphics, or lots of load screens. In order for it to run, you have to have something reduced in order to utilize Wii Speak. 

The headset on the other hand, doesn't take as much bandwidth as the Wii Speak peripheral, mainly because your Wii isn't having sound travel through a port (That big grey box for Wii Speak), then going through your TV speakers. The sound goes directly to the headset, and isn't overusing the Wii's power.
