Near enough everything is a theory if you can't prove it mathematically.
Then again, theory is pretty much the highest scientific accolade a scientific idea can reach, it has to be supported by volumes of evidence and there has to be an almost unanimous consensus on it.
And again, speciation can and has been observed (link). And even if we hadn't observed it directly, the genetic evidence and the fossil evidence are more than enough to prove it has happened.
