It's sad to hear you say this, when the very OP itself is both a valid observation of evolution and is valid scientific evidence.
How about Canis Lupus? More or less within the time of human civilisation the whole of Canis Lupus Familiaris has evolved. From the grey wolf has come every species of dog, with the selective pressure being the needs of the humans who domesticated them. Within 13,000 years going from a close descendant of the modern grey wolf to every species of dog.
This has been observed, we have the bones, we have the pictures, we have the historical accounts and descriptions, we have the genetic information. This evolution has occurred and will continue to occur and we (mankind) have been here the whole time to observe it.
I can apply this to pretty much any form of selective breeding; canis lupus is just a nice example. The intervention of humans can speed up evolution and we can make observations on this. Basically, why do people bother breeding prize bulls if it doesn't make future generations any different from the last?
And it is a perfectly valid scientific theory. You just don't seem to fully understand what a theory is. You also seem to think that theory should explain everything 100% before it can be called so, if this were the case it would be a law. You say this even to the point that the things you attributed to it (space and time) have nothing to do with the theory of evolution.
A theory is our best possible explanation based on the knowledge and evidence we have available, it will constantly be adapted with the acquisition of new knowledge as time passes. The unexplained will become explained and we will always have an explanation that is ever increasing in accuracy and correctness.
Then you say the bible explains everything. What exactly does the Bible say on evolution? Not abiogeneisis (the origin of life) but evolution (the origin of species)? As far as I'm aware the bible says nothing about evolution. Heck, what does the bible say on Fermat's last theorem? Whilst it is a good book for many people to live their life by, I'm not sure you can claim that it has all the answers.
