Personally in addition to fair play (talking during the day would give them a big communication advantage letting them come up with plans on the fly based on daytime happenings), I take my cue from real-life games with the day/night mechanic where people just close their eyes to "go to sleep" and the werewolves (mafia) "wake up" and silently vote on a victim. (Note that this also relies on the honor code for townies to not peek.) Other than this the werewolves have no special means of communication.
I am totally against daytime communication between mafia.
