Premium cars are highly detailed models that have been built up from scratch and have an absurd amount of attention to every minute detail. They even have fully modeled interiors (not the dashboard alone but everything inside the cockpit, from seats, belts, etc) and feature full physical damage (panel dislocation and such).

Standard cars are slightly less detailed, modeled from previous GT cars and don't have modeled interiors, only the dashboard view. They also don't feature the major physical damage, only scratches and dents. 

All 1000 cars, 200 premium and 800 standard will be featured in the GT5 game, not DLC.

I'm hoping to see more of these custom pre-order themes for premium cars. Livery customization has been one of the features in older GT's, but for internal parts not external. This could mean that there's more aspects of the customization left to unveil too.
