I love it personally. Love the hand painted look, it really pops in a way a more realistic style wouldn't. It also keeps it more in the realm of light fantasy allowing them to do more fantastical stuff without it seeming out of place.
Also, I'm mindful that Zelda isn't an adult game, not to say it's kiddie but most of you played it as kids and so will your kids, so a child friendly look for a sometimes dark game is quite appropriate. I remember I always had to play through the zombies on ZOoT because they scared my son. And that was with N64 graphics. So it shouldn't get too realistic.
