Nintendo was very pressed for time during that conference. They wanted all the press in attendance to see the 3DS in action before they went to the next event. People like IGN and Kotaku will make sure to see it on the show floor, but the mainstream might not get what the big deal is, but if they see it they will at least mention it in their article. CNN probably will do 15 minutes of coverage on all of E3, Nintendo needed to absolutely make sure they include the 3DS in that. With 45 minutes to show off the 3DS to the entire crows, and the Sony conference happening not too long after, they needed to keep everything short. OoT 3D or Star Fox 3D don't need to be mentioned, they are core gamer games and since we won't be seeing the 3D ourselves, there is no reason to do anything other than an announcement (which we will see anyway later that day). They are pushing the 3DS to the new gamers in the conference, since the core will see the screenshots and games anyway.
