How will Zelda Wii be "Different" than other Zelda games?

Why not.  GTAIV, MGS 4, Final Fantasy XIII and Mario Galaxy 2 has been.

Besides mario and maybe GTA I don't think anyone called those games innovative. 

I hear it all the time.  I still people calling FFXIII battle engine a 'revolution for JRPGs'.  As for MGSIV, people were calling it innovative before it even came out.  And continued to do so based on its story alone.
