Let me be more clear (Since what you said is almost exactly 1 side of the side-kicking system) Side-kicking is from City of Heroes (or basically any Crytek game, but under a different name perhaps).
Joining Higher Level Character
Could have the lower SL character join the higher level one. In doing so the lower SL character will increase in stats to higher character SL -1, (with all the stat increases and everything else). To work in Demon's Souls a formula for % of each stat per the total would have to be used in how to lvl that person up.
Joining a Lower Level Character
The Higher sl character would join a much lower level person. In doing so the higher SL character will decrease their SL to equal that of the lower level character. Just like above, a % of each stat against the total would have to be used in how to distribute points.
The side kicking system is a bit more complicated that that, but for DS something this simple would work great.
